30ml Damson No12
15ml lemon juice
Castlebrook Classic Cuvée English sparkling wine
TO GARNISH
A frozen damson
Lemon Peel
METHOD
Pour 30ml of Damson No12 and 15ml of lemon juice straight into a flute glass. Top up the rest of the glass with English sparkling wine.

15ml lemon juice
25ml Aquafaba or 1 medium egg white
TO GARNISH
A frozen damson
Lemon Peel
METHOD
Pour all ingredients into a cocktail shaker filled with ice. Shake vigorously for 1 minute and strain into a rocks glass filled with ice.

The Spring Equinox
SERVES 1
INGREDIENTS
50ml Botanic No7
20ml lemon juice
20ml Honey syrup
TO GARNISH
Fresh mint
METHOD
Fill a large wine glass with crushed ice and a handful of mint leaves. Stir to disturb the leaves through the ice. Pour Botanic No7, lemon juice and honey syrup into a cocktail shaker filled with ice. Shake for 20 seconds and strain into a wine glass. Top up with newton court apple cider.

The Rhubarb Martini
SERVES 1
INGREDIENTS
50ml Botanic No7
70ml Rhubarb syrup
10ml lemon juice
TO GARNISH
Dehydrated pear
METHOD
Pour all ingredients into a cocktail shaker filled with ice. Shake well for 20 seconds. Strain into a chilled martini glass. Rest a dehydrated pear on top of the glass to garnish.
